The second #SalsoStories is dedicated to the pastry chef Claudio Gatti owner of Tabiano Bakery in Tabiano Bagni. He plays a major role in italian pastry scene and is the President of the “Sourdough and Italian Panettone Masters Academy” which is born to protect and spread consciousness about leavened products made in Italy. He’s a real craftsman who reinvents his cult products every season and exports them all over the world. Claudio Gatti is a stubborn innovator of the traditional tastes and his Focaccia is a trademark of a style where taste and lightness wonderfully balance each other.

“We think that Pastry, the one of excellence, is an art even more than an attitude. That is what our father, Renzo Tosi, thought us together with a dedication that has been handed down from generation to generation, supported by the passion for quality, which has always been an authentic guarantee of excellence for all our products ” We could not have said it better … we’re pleased to introduce you Michela and Lorenza Tosi, entrepreneurs at the helm of the famous @pasticceriatosi1962, where the legendary Focaccia was born in 1965, an absolute excellence of our territory, to be enjoyed all year round. The Love Story between 𝗖𝗮𝗿𝗽𝗮𝗻𝗲𝘀𝗲 𝗳𝗮𝗺𝗶𝗹𝘆 and Salsomaggiore Terme began in 1966. At that time, they owned a small local grocery store but they had a higher purpose: they wanted 𝘁𝗼 𝗯𝗿𝗶𝗻𝗴 𝗹𝗼𝗰𝗮𝗹 𝘁𝗮𝘀𝘁𝗲𝗳𝘂𝗹 𝘀𝗽𝗲𝗰𝗶𝗮𝗹𝘁𝗶𝗲𝘀 𝗮𝗿𝗼𝘂𝗻𝗱 𝗜𝘁𝗮𝗹𝘆 𝗮𝗻𝗱 𝘁𝗵𝗲 𝘄𝗵𝗼𝗹𝗲 𝘄𝗼𝗿𝗹𝗱. How to get this? Just 𝘀𝘁𝗮𝗿𝘁𝗶𝗻𝗴 𝗳𝗿𝗼𝗺 𝘁𝗵𝗲𝗶𝗿 𝘁𝗲𝗿𝗿𝗶𝘁𝗼𝗿𝘆, from the land where they grew up: so the heirs, Massimiliano and Francesca founded 𝗣𝗮𝗿𝗺𝗮𝗠𝗲𝗻𝘂̀! Their project 𝘄𝗶𝗹𝗹 𝗿𝗲𝗰𝗼𝘃𝗲𝗿 𝗺𝗮𝗻𝘆 𝗼𝗹𝗱 𝗮𝗻𝗱 𝘁𝗿𝗮𝗱𝗶𝘁𝗶𝗼𝗻𝗮𝗹 𝗰𝘂𝗹𝘁𝗶𝘃𝗮𝘁𝗶𝗼𝗻𝘀 like olive trees, wheat crops and Lambrusco Maestri vineyards. Their philosophy main idea is the 𝗳𝘂𝗹𝗹 𝗿𝗲𝘀𝗽𝗲𝗰𝘁 𝗼𝗳 “𝗼𝗿𝗶𝗴𝗶𝗻𝘀”!
Inspired by “Chocolat” by Lasse Hallström Marco Biolzi, owner of the Bar and ice-cream shop I Portici, invented the Pralines with typical liquors of Salsomaggiore Terme and the Salsomaggiore Terme Salt Chocolate.
